Ceramic wine, advantages of your return

Many times the search for new ways of making a product leads us back to ancient techniques. This is what is happening with wine and ceramic aging systems. The upbringing and aging of the liquid in jars of this material is returning again. Therefore, companies like govalmavin They have carried out studies on the behavior of the product and the different materials and techniques to improve its final result. Here we tell you what their benefits.

govalmavin has presented the results of this study that aimed to develop differential wines through breeding methods using clay jars. In the work, the different ceramic materials have been studied to achieve different porosities. Also the shapes of the jars to optimize their capacity, as well as the different closures of the ceramic jars.

Another interesting aspect in the use of ceramics as a material is the reuse of the jars and the cleaning system of this. In this sense, water at 85º degrees and with a medium pressure has been used, achieving optimal results. The study has been able to carry out sensory tests of different wines raised in wood and ceramics. Also the different tastes in different markets, observing that, although they are clearly differentiated wines, they are very well accepted by the public.

The differences between wood and ceramic

Aging in wood and ceramics gives us different results. Although the raw material, the winery, the varieties and the production are the same in the first phases, the two materials give it different personalities.

Wood-aged wines they add aromas and flavors to the wine that come from wood and its toasted. The roast gives it the aromas of chocolate, coffee or others. Many wine lovers are passionate about them. The porosity of the wood, mostly wood oak, influences the alcoholic strength by concentrating the wine over time.

In the case of aging in ceramics or terracotta porosity will play the same role but it will do so at different times and will depend on the ceramic material. In this case, there is no contribution of flavor and aromas and you get a wine without further influence. More wines are obtained fruit trees and vegetables.

Undoubtedly, there is a market for both types of aging, in that of the jar, wines will be obtained where the variety and grape they will be more present. In the case of wood, it is a perfect aging for wines that we want to have a defined personality and with other aromas to achieve somewhat more "complex" wines.
