NotMilk is the "milk" synthetic created by Artificial Intelligence. It collects information from products as disparate as pineapple and cabbage to achieve the most realistic taste. How was this drink born?

What Giuseppe did was access a database with information concerning vegetable ingredients. In this he found a wide range of legumes, seeds, fruits, tubers ... They were aware that the agri-food sector is characterized by environmental problems such as waste of water and land, deforestation and polluting emissions. That is why they pride themselves on offering a product based on rational criteria to minimize impact to a minimum.

The result is what we might consider a drink ultra-processed. A wide variety of different ingredients come together in it to replicate the taste and properties of milk. Some of these are: water, pea protein, chicory root fiber, pineapple juice concentrate, coconut oil… The list goes on. In addition, Giuseppe has taken different variables into account to launch two versions. One is the whole Not Milk Whole and the other is Not Milk 2% Reduced Fat. The first replicates the whole and the second to the skimmed one.

The curious story behind NotMilk

The full name of the startup Chilean is The Not Company. Its founders chose the name of the algorithm in homage to Giuseppe Arcimboldo. It is about an artist from the late Middle Ages who painted portraits with vegetables. Thanks to this they can carry out their purposes within the framework of the sustainability. Also, the name clearly indicates that it is not milk. In this way, they can quickly expand to Europe, where the regulations state that you can only call milk "milk".

La philosophy The company's assumption is that eating animal products harms the planet. Therefore, they look for a way to preserve the flavor, only in a sustainable way and in a different product from the original. This they have achieved since it uses a 92% less water and un 74% less energy compared to milk. Just as it emits a 74% less de carbon dioxide to the atmosphere.
