Place and mode of production of the white gold of Colima

Cuyutlán, a small town in Colima, is the place where the main producers of the best salt nationally and worldwide. Due to its geographical location, its slopes and mountains, its sea and the minerals of its volcano, it concentrates all the natural elements to obtain this seasoning how much is enjoyed in the world of gastronomy.

La shawl from this region is produced in a traditional way with the techniques of their indigenous ancestors that have been inherited for generations. However, it is the Colima Salineros Cooperative Society the one in charge of obtaining such a precious product. This company emerged in 1925, after working with salt had passed through different hands, both local and settler.

The virtues of Colima white gold lie due to its proximity to the Cuyutlán Lagoon. It is located in the basin of Pacifico and on the boundaries of the municipalities of Tecomán and Armory. The natural action of both the sun and the wind allows the seawater to evaporate to the crystallization of salt.

Its salt flats give a product rich in minerals and trace elements, being low in sodium. It thus has high value in the culinary world. It is considered the better salt for human consumption. In addition, it generates significant wealth among workers who collect it manually. Hence its name Colima white gold.

A family cooperative

Mario Ponce Galindo placeholder image, president of the cooperative of salineros, tells us that this company was founded after a call launched by the state government.

“In 1917 there was an expropriation and the saline lands were declared part of the nation. All salt producers in the state were summoned. In November 1924 the first meeting was held to form the first directive, ”he recalls.

“Currently, the cooperative is made up of 192 members. Their shares are inherited from generation to generation ”, he explains. Ponce Galindo.

He adds that for this year they plan to produce from 37 to 39 thousand tons of salt, which are produced on 3.500 hectares. Finally, he mentions that the ton is sold at 1.250 pesos (equivalent to € 58), a price that is defined according to supply and demand.
