The first edition of the Guía Peñín Jamón de Teruel has a print run of 5.000 copies. It was born with the aim of being the publication most consulted by professionals and amateurs in the world of ham and has the support of the prestigious Peñín Guide, the most comprehensive guide to Spanish wines internationally and the main reference guide among professionals and amateurs.

Its main objective is to promote Teruel Ham firms and dryers while being a reference guide for professionals in the purchase, distribution and HORECA channel to whom this publication will be distributed.
A total of 36 Teruel hams and 13 Teruel Shoulders, representing 97% of the dryers registered in the CRDOP, appear in the Peñín Jamón de Teruel Guide, a participation described as "a complete success", by the president and director of the Regulatory Council, Ricardo Mosteo. All these products are evaluated with a scoring system and a range that goes from a maximum of 100 points to a minimum of 50 points. The PDO Teruel hams and shoulders that are on the scale of 95 to 100 points are considered exceptional; from 90 to 94, excellent; from 85 to 89, very good; from 80 to 84, good; from 70 to 79, correct; from 60 to 69, not recommended and from 50 to 59, defective.

A team of expert tasters from Guía Peñín was last May in Teruel tasting and assessing each of these products that make up the first ham manual in the world with these characteristics. The note that appears in the Guide is the result of a thorough and exhaustive examination of the pieces: taste, texture, aroma, infiltrated fat, both internal and external appearance... This difficult task has been carried out by Carlos González (director of Guía Peñín ), Javier Luengo (editorial manager) and Alberto Ruffoni, all of them responsible for the tasting of more than 10.000 wines a year, as well as food products.

Each Teruel ham brand and company has a space in the Guide where, in addition to the product's score, the most relevant information about it appears: location and address, contact telephone number, website, mail... plus a description of the company. In this section, also translated into English, appears the most interesting information about the dryer and brand, illustrated with photographs of its facilities and product.

Likewise, the Peñín Jamón de Teruel Guide also includes a section with 10 routes to get to know the province of Teruel with visits to the most emblematic places in each region, and a map in which the location and location of each one of them has been inserted. the PDO dryers and the possibility of visiting them.
