The salchipapas They are a typical dish in several Latin American countries such as Peru, Mexico, Colombia, Chile, Ecuador, Argentina, Bolivia and Ecuador. Its origins go back as a street dish and have some variations such as choripapa. At Peru the day of the salchipapa is commemorated on the third Sunday of November. It is a very easy delicacy to prepare and can be accompanied to taste even with fried egg. In recent years, this preparation has also become popular and expanded to Spain, where you can find it in the 'foodtrucks' and bars.

Preparation of the salchipapas

To prepare this delicious dish you need four potatoes cut into sticks, six sausages cut on the bias, vegetable oil and sauces to taste (Ketchup, Mustard, Mayonnaise, Chili, etc). The first step is fry potatoes, add the salt and leave in a warm place so that they do not get cold. Then you must repeat the process with the sausages. Both ingredients are mixed well, you add the desired sauce and that's it. In Spain is usually completed also with grated cheese to enjoy some salchipapas delicious and consistent.

This succulent variation, but with sausageIt contains a pound of Creole potatoes, a kilo of fine potatoes, four sausages, oil and salt to taste. First we cut both kinds of potato in matchstick and coin, add salt, chop the chorizo, heat the oil in the pan, fry the potatoes, do the same with the sausage and we have our delicious dish served. It can also be accompanied with any sauce of our preference.

The restaurants where you can consume this delicious dish in any of their two variants or other lesser known are located in different districts from the Peruvian capital.
