This dish is a mainstay of the cuisine of the jungle of Peru. It owes its name to San Juan Bautista And, in fact, it is a very popular recipe during the San Juan festivities.

Tacacho with jerky and cocona salad

The main ingredients of this dish are mass of banana green and small pieces of chicarrón cooked, roasted, fried or grilled. The term "tacacho" means "the beaten", because the banana is crushed for its preparation.

Then, jerky -dehydrated pork meat- is the third essential element for this Peruvian jungle stew. It offers us a contrast of flavors on the palate, since there are several spices that can be used to dress the dish.

Palmito with avocado and artichoke sauce

El palmetto is a product obtained from heart of various species of Palm tree, in particular of coconut tree, the jasará or the azaí. It is a widely consumed crop since pre-Columbian times and has now become a product good gourmet food. It is accompanied with avocado sauce (avocado) mixed with lime juice, which gives it a citrus flavor enhancing the flavor.
