The Christmas holidays are a special season in different latitudes, while we enjoy as a family delicious delicacies that can even be from other cuisines. To prepare this succulent appetizer we need a gram of bread baguette, 65 grams of tempered unsalted butter, 30 milliliters of extra virgin olive oil, one gram of lemon zest, four grams of granulated garlic, three cloves of garlic, ground black pepper, cheese Parmesan, coarse salt and fresh parsley.

First we preheat the oven to 180 ° C, then we prepare a tray by covering it with parchment paper. We must ensure that the butter is at room temperature. We wash and dry the lemon well, peel the garlic cloves and chop them very finely. We cut the bread into finger-shaped slices.

We put the softened butter in a bowl and add the olive oil, the lemon zest, the garlic cloves, a hit of black pepper, granulated garlic and a pinch of coarse salt. We mix everything until leaving a creamy texture. We spread each slice of bread baguette with the creamy pasta, we distribute them on the prepared tray and bake them for 12 to 15 minutes, chop the parsley and serve it. Complete Peruvian dishes for Christmas

- Cause Filled: complete delicacy for which we need a kilogram of pope yellow, five hundred grams of chicken breast, an onion, mayonnaise, a lime, three yellow peppers, a avocado, extra virgin olive oil, salt and pepper to taste.

First we cook the potatoes and press them until they are hot, we add the chili pepper, the lime juice, salt and pepper, mix well until we get a creamy texture. We divide the dough into three parts and reserve it. Cook the chicken breast, fray it and mix it with the finely chopped onion and mayonnaise. We taste and cut the avocado into half-centimeter slices.

We assemble the plate with the help of a plating ring, we put the base of the third on the mass of the yellow potato, and on it we place the avocado, season with a pinch of salt and pepper. We cover the second layer of the dough, on it we place the mixture of chicken, onion and mayonnaise, pressing lightly with a fork. Once ready, we serve with green leaves. It can be accompanied with huancaína sauce or olive sauce to taste to get more color and flavor.

Spinach, the protagonist

- Green noodles: another of the Peruvian dishes for Christmas for which you need 1 kilogram of spaghetti noodles, 30 grams of fresh basil and ½ kilogram of fresh spinach. Also 400 grams of fresh cheese, 120 grams of Parmesan cheese, 200 grams of ground pecans, 1 cup of evaporated milk, ½ cup of oil, two cloves of garlic, salt and pepper.

First we boil the water with a little salt, when it is hot we add the pasta, depending on the type and the brand it usually takes between eight to ten minutes. We are testing, while it cooks we add the basil for a minute, then we remove it and remove the water. In a frying pan, lightly fry the spinach leaves, then add half a cup of oil, the evaporated milk and blend the spinach little by little. When we get the cream, we add the basil and blend again.

Once the spinach and basil are blended, add two cloves of garlic, fresh cheese, Parmesan cheese, pecans, salt and pepper. We continue the same procedure until we obtain the sauce. With the spaghetti noodles boiled, we mix and stir them until we get a green tone. Once ready, we accompany it with steak to taste.

An orange special

- Chicken and carrot puffs: this is not one of the Peruvian dishes for Christmas, but it has influence from the Andean country. Easy to prepare, for this we require 175 grams of cooked chicken, 150 grams of cooked carrot, a sheet of puff pastry, an onion, an egg, two tablespoons of oil, salt and pepper. First we peel the onion into small pieces, then in a pan we heat the oil over medium / high heat and fry it until it is tender with a little salt.

With the golden onion, add the chicken and stir for a couple of minutes to mix well. It is toasted a little while the onion flavor is impregnated. When it is ready we pass it to a plate, preferably large so that it is stretched, while the chicken cools, we crush the carrots and season them with pepper to taste.

We stretch the puff pastry sheets until they are very thin, to assemble them we place a little pile of the carrot paste, on top of the carrot we put the chicken mixture with the onion and we roll them as if they were cannelloni. We turn the oven to 200 ° C for 20 minutes, while it heats up, when it is ready we paint with beaten egg and sprinkle them. Can be consumed cold or warm.
