Its owner, Ignacio Principe, explains that he came to this wine because “he wanted to know what he could get out of the Garnacha variety vineyard. It dyes less than tempranillo ”. After direct pressing (without maceration), the wine 100% red garnacha from that moment on as a white.
Fermentation at a low temperature will offer a smoother, fresher and different side of the Garnacha. The wine appears as a pale pink, in which notes of white flowers and rose petals predominate.
