Fermentation at a low temperature will offer a smoother, fresher and different side of the Garnacha. The wine appears as a pale pink, in which notes of white flowers and rose petals predominate.

César Príncipe Winery, which has 40 hectares of vineyards, began as a family underground winery. In 2000 he built the new facilities in Fuensaldana with the aim of taking a qualitative leap. In red it also has the 13 Nicolas jugs, equally 100% Tempranillo. In homage to claret, a denomination that cannot be used for wine, Ignacio Principe gave him the name of Moon claret 80% Tempranillo and 20% Albillo, Garnacha and Verdejo rosé.
