Spelled, a great wheat

One of the varieties of wheat best known for its quality is spelled, which is undoubtedly a great variety of wheat for many. A variety that ceased to be cultivated in Europe as a result of the industrialization of the field since the harvesters could not do their job well due to having a harder shell. In addition, its production was and is scarcer than other varieties that also improved in profitability while spelled was forgotten.

In the end, the contribution and balance of nutrients has given rise to this great variety of wheat, Triticum spelta, better known as spelled. This variety of wheat with a very ancient origin and less evolution is more digestible for the human body. Thus the values ​​of protein, minerals, fiber and vitamins are different from conventional wheat varieties. Let's see it.

While most wheat varieties have 11-12% protein, spelled has 15%. But although this is important, the most important thing is that with this higher percentage of protein the eight essential amino acids for the human body are included.

The contribution of minerals is also higher than in conventional wheat, especially those referring to iron, magnesium and phosphorus.

The fiber level in spelled is twice that of conventional wheat, reaching 10%. Also, fiber is soluble. All this slows down the digestion and absorption of nutrients, being very important for many people, for example diabetics. It also provides an interesting fiber for digestion.

Spelled vitamins

Its vitamin levels are somewhat higher than the vast majority of wheat varieties. Its high level of vitamin B (B6 and B3), A and E is remarkable.

On the other hand, the level of gluten in spelled is lower and simpler than that of conventional wheat, facilitating digestion. It is important to emphasize that it is not a food gluten-free and therefore it is not suitable for coeliacs.
