A long and thorough process
During this period, the companies have received advice from the Regulatory Council to prepare their candidacy dossiers for each place. Subsequently, the companies have submitted their candidates to Cavas of Qualified Area. These have been tasted by a committee of experts made up of:

La Cava from Qualified Area tasting is singular. It aims to examine the different aspects of a cava such as color, visual appearance and texture of the carbonic. Also complexity, persistence and evolution of aromas, structure and balance. It is conceived with these attributes to be representative of a singularity: a place.
Once the tasting is done, the requests have been sent to the Department of agriculture. Once examined it has proceeded to its recognition. The result has been:
