A long and thorough process

During this period, the companies have received advice from the Regulatory Council to prepare their candidacy dossiers for each place. Subsequently, the companies have submitted their candidates to Cavas of Qualified Area. These have been tasted by a committee of experts made up of:

La Cava from Qualified Area tasting is singular. It aims to examine the different aspects of a cava such as color, visual appearance and texture of the carbonic.
