The biggest challenge of sumoll it is the maturation since it needs many hours of light. This can lead to insufficient maturation and very aggressive wines, excessively tannic and acidic.
However, it is an excellent variety for storage in wood or ceramic with an excellent evolution that manages to balance these wines and turn them into great wines.
Syrah, among the world's red grape varieties
Although its origin is from the Persian city of shiraz, has been in the wine-growing area of Rhone, riding a France, where it has been cultivated and improved the most. It is currently one of the red grape varieties cultivated all over the world.
La Syrah variety it is sensitive to disease and drought. It has good productivity. Its clusters are medium and compact. Winemaking gives us alcoholic wines, structured slightly acidic and with high coloration. They are full-bodied wines that allow excellent aging.
Tempranillo, of the majority red grape varieties
It is without a doubt the Spanish star variety. Also known by the names of Ull de Llebre, Tinta del País, Tinta de Toro, Tinto fino, Tinta Roriz and Cencibel. Variety widely cultivated in The Rioja. Its name comes from its early maturation. Its productivity is medium and, although it ripens early, it needs a high light intensity for its correct ripening and formation of sugars. The wines made with Tempranillo They are aromatic, with alcoholic graduation, with low acidity and little tannic. Its intense color stands out. Their wines are versatile and good results are obtained in youth, upbringing and keeping, where they have an excellent evolution.
Bull ink
It is a variety very similar to Tempranillo, cultivated in the DO Toro and throughout the area of Castilla y León Its bunches are medium and compact in size. Its maturation is somewhat later than Tempranillo. It produces full-bodied alcoholic wines that evolve very well in wood.
Trepat
Variety of origin of Tarragona, specifically in the Conca de Barbera. Although somewhat sensitive to drought and disease, its productivity is average. Currently, its cultivation is in the recovery phase. Its bunches are medium, compact and its skin is fine. With the Trepat they are made wines and cavas pink very fruity, fresh and with a very clean pink color.
