Tapas in its most modern form

The new menu that offers NoDrama as an incentive to visit its new terrace brings the classic Spanish tapas experience to a new culinary level. His slogan makes it clear: «Tapas Classic revisited in the NoDrama style ». The new dishes will only be available to customers who decide to book at the terrace of the premises. The objective is to offer a more informal snack and promote the new area that the restaurant has opened.

The kitchen that will offer this new dish will be open from 12:30 noon to 12 midnight. The objective of the covers will be to adapt to the warm weather that characterizes the summer to achieve, in the words of the chef himself, «A more casual way –but just as important- of tasting this exquisite cooking in a more informal setting.

The new dishes that appear on the letter are as follows:

  • Croquettes Madrid-style tripe with 25-year-old sherry vinegar gel and Japanese kimchi
  • Lobster fucking roll filler lobster with chili garlic mayonnaise and pickled cucumber and tobiko roe
  • crispy taco of fish acevichado with tex-mex guacamole and fried corn
  • Pani puri stuffed with gazpacho and black leg Iberian ham (an authentic explosion of flavor in the mouth)

The tapas of the hand with the letter

Tapas are not the only thing that can be enjoyed on the new NoDrama terrace. There will also be a cocktail exclusive. This drink will be made in collaboration with Louis Roederer Champagne. It will be a consommé of peach e hibiscus with champagne that will be promoted as the official cocktail of the new NoDrama terrace. In addition to this drink, on the terrace you can also enjoy a menu €25 that changes every two weeks.

En NoDrama the dishes are always designed so that consumers have a variety of food that can satisfy them at any time. The letter is divided into sections depending on the nutrients they provide to the body. For example, protein, vegetables or carbohydrates. The entire menu varies according to the station of the year and the origin of the food. This makes the NoDrama menu one of the most interesting to visit.

From their kitchen they seek to provoke emotion so that the experience remains in the memory of the clients. The cocktails are also part of the experience, brought from all over the world and prepared conscientiously. Along with these there is a menu of fine and imported wines that will bring sweetness to the most demanding palates.

The Chef behind NoDrama

Pablo Fernandez Rios is responsible for the new dishes of Fine Tapas. Almost 20 years ago he began his professional career in the kitchens of Spain. She received training from her in Madrid, where he learned the secrets of Italian cuisine from professionals such as Stefano Franzín and Marco di Tullio. Since then, he has continued to raise the level of his training.

After more than 10 years in the Spanish capital, Pablo traveled to London, where he learned new techniques that would enrich his gastronomic culture. He worked in the kitchens of restaurants of very different styles, such as the Celeste Restaurant (under the supervision of Éric Fréchon and maintaining the Michelin star in 2018) or Gordon Ramsey. 

After completing training in French, British, Nikkei, Italian, Spanish and Asian cuisine, he headed to Peru. There he works with chef Gastón Acurio to finish his training with the flavors of Latin America. Now back in Spain he presents his first proposal gastronomic own in NoDrama.
