Xylitol has been known since 1890, when the German chemistry professor Emil Fischer and his student Rudolf Stahel discovered a new compound called "xylitol" in beech and birch chips. In 1902 Dr. Fischer was awarded the Nobel Prize in Chemistry in recognition of his versatile achievements in the field of chemical research.
