"My purpose is to improve your diet and transform your life." This is how the Huelva nutritionist presents himself, Carlos Rios, on his Instagram account. In recent years, it has become one of the main references in terms of nutrition and diet it means. In fact, he is the creator of the 'realfooding' movement, which consists of eating as healthy a diet as possible - that is, avoiding processed foods and, of course, ultra-processed-. In this fight to bring his hundreds of thousands of followers closer together, Ríos already released a 100% real hummus -made with chickpeas, water, salt, olive oil, lemon juice, tahini, garlic powder, sweet paprika and cumin-. Now, after the resounding success of his first launch, the Andalusian has presented his second 'realfooder' product: the mutabal. What is it? What is it made of? Let's find out!

What is the mutabal?

It is a Eggplants Cream -actually, its texture is quite similar to that of hummus, hence it is also known as aubergine hummus-, and it is a typical preparation of the more lebanese. That is why Carlos Rios has once again collaborated, as it did with its first product, with the company Taste Shukran which, as they say from the firm itself, is "Mediterranean Lebanese".

El mutabal It is made with eggplant, lemon juice, garlic, onion powder, salt, and extra virgin olive oil. This last ingredient, essential in the flavor of Mediterranean cuisine, is an improvement compared to the nutritionist's first launch - since in that dry olive oil was used. Moreover, from now on, their products -because yes, there will be more-, they will be made with AOVE

The properties of the mutabal

Let's start with the main ingredient: eggplant. As Carlos Ríos assured in his Instagram profile, "it is a vegetable with a high content of antioxidants, particularly anthocyanins, which protect our cells against oxidative damage." And not only that, but it is also rich in fiber, minerals -potassium- and Vitamins -folate, vitamin C, K-, benefiting the cardiovascular system or the digestive system, among others.

On the other hand, something that his followers had been crying out for: the extra virgin olive oil. The benefits of this liquid gold are well known, but it is worth remembering that it has "more than 200 components with antioxidant and anti-inflammatory properties, etc.", as the Andalusian explains.
