How are fondillón wines

The fondillón wines They are noble wines from the area of Alicante. They are made with grapes overripened on the vine of the variety 100% Monastrell. This overripening of the grape leads to the production of wines with a high alcoholic level (16-18%) and with a high aromatic level.

The aging of these wines is carried out in a soleras scale, that is to say, with the mixture of the oldest ones with a controlled contribution of other newer soles. All this causes great wealth and unique product in the world. These contributions can also be made by vintage, that is, with the blends and contribution of wines from the same vintage.

In the case of fondillón wines no alcohol is added, which distinguishes it from other wines such as Porto or in some wines from Jerez. The aging is long, a minimum of aging is established for these wines of 10 years. In these aging, old oak barrels are used and large in size. These barrels also provide a unique character to these great Spanish wines. We encourage you to taste the two awarded by the MAP this year!
