The kitchen does not only include ingredients ways to combine them, but it is much more than that. Each plate has its own history, why it was done this way and not otherwise. The patty, for example, it owes its peculiar shape to the protection of the food that our ancestors made on long journeys. And this publication fulfills this essential requirement. Due to the hairsalon of the book has caught our attention the "simplicity" of the cover. But not for his simplicity itself, but by the fact that it is so pretty without so much attire. The Sea, The Sea. Leandro Pereira's latest project

Since we are talking about the chef's latest work, we also want to tell you about his latest project. Leandro Pereira He has practiced his profession in many countries, he is a born traveler. So it is not surprising that he was commissioned «Portugal: "The Cookbook". she started studying architecture, but later he realized that it was not for him and decided to study more. He worked side by side with renowned chefs until he opened his own restaurant: Londoner. They say out there that you usually learn more from losses what of the triumphs and so it was for Leandro Pereira.

Some time later he appeared The Sea, The Sea, a project he undertook together with a restorer. A bold proposal, but unique. Made of fishmonger, seafood table of the freelance chef. They transport the fish fresh from the coast to the establishment with the company's own vans. And, in addition, they have introduced Japanese techniques, the fish kings, as the dry aging.

At first I wasn't really on board, but the concept really appealed to me. It was something I always wanted to do, and I wasn't going to be the person who took care of all the aspects like I did in Londrino, I was just going to do what I love: cooking and taking care of food. So we opened in Chelsea and then in 2021 we opened Chef's Table in Hackney. Leandro Pereira
