Green noodles, Italo-Peruvian delight

The green noodles they are one of the succulent dishes of the gastronomic combination Italian-Peruvian. They are easy to prepare so that you can enjoy them to the fullest in your own home. His history dates back to Italian immigrants who, not having all the ingredients for this delicacy, they tried to prepare it the most similar that of Italy and this is how this delicious stew was born.

Preparation of green noodles

To prepare this succulent stew of green noodles, 1 kilogram of spaghetti noodles is required, 30 grams of basil fresh and ½ kilogram of spinach fresh. Also 400 grams of cheese fresh, 120 grams of Parmesan cheese and 200 grams of ground pecans. Finally, 1 cup of evaporated milk, ½ cup of oil, two cloves of garlic, salt and pepper.

First we boil the water with a little salt and when it is hot we add the pasta, which depending on the type and brand usually takes between eight to ten minutes. We are testing, while it cooks we add the basil for a minute, then we remove it and remove the water.

In a frying pan lightly fry the spinach leavesThen we add half a cup of oil, the evaporated milk and blend those initial leaves little by little. When we get the cream, we add the basil and blend again.

Once the spinach and basil are blended, add two cloves of garlic, fresh cheese, Parmesan cheese, pecans, salt and pepper. We continue the same procedure until we obtain the sauce that gives color to the green noodles. With the boiled spaghetti, we mix and stir them until the greenish tone is obtained. Once ready, we accompany it with steak to taste.

Where can you consume it?

In places specialized in pasta such as La Romana or the steak, among others in Lima. It is one of the most prepared dishes at home. The Peru It has many succulent dishes and varieties of noodles. It can be accompanied with meat to taste or potato, it is a recipe inherited from the Italian colony.
