'El Maestro Quesero' from Central Lechera

It has been presented at the headquarters of Asturian Lechera Central, 'The Master Cheesemaker'. A business project of the dairy company that unites five Asturian cheese factories. Their common bond is the artisanal elaboration of their milk products from the Asturian central dairy brand.

Therefore, the 5 varieties chosen to inaugurate this family are: Cabrales PDO, Afuega'l Pitu PDO, Casín PDO, Los Beyos PGI and Vidiago Traditional Cheese. All of them handcrafted and made in Asturias. This selection of cheese will be marketed nationwide under the brand 'El Maestro Quesero'.

In addition, it has the seal Foods of Natural Paradise. This distinguishes those foods that are marked by tradition. That is transmitted from generation to generation. As well as the particular geographical characteristics of the Principality.

Cabrales

The second best known and the fourth most consumed of Spain. Born in Picos de Europa. It is made exclusively with raw cow's milk. The same artisanal process that was followed since 1913 in the El Molín Cave. The most surprising thing about this elaboration is that it matures in this cave. There the Penicillium fungus gives it its characteristic blue-green streaks.

Afuega'l Pitu

It has its origin in Grao, Pravia, Salas and Tineo. It is made slowly with Friesian or Asturian cow's milk from the valleys. Its particular trunk-conical shape and the red variety with paprika make this cheese unique.

Almost N

It is the oldest of Asturias and one of the oldest of Spain. It is made only with milk from casinas cows. They have the privilege of grazing in full Redes Natural Park.

The Beyos

It is born in the gorge of The Beyos, in the heart of the Picos de Europa. The milk used is of the highest quality and from selected farms. Currently only three cheese factories make it in the Principality of Asturias.

Vidiago

For many years, only the family Collar made this cheese. In this way, today his working example has reached more producers. This cheese is made with milk from Vidiago. Cows that graze in meadows near the sea, which gives it a soft and different flavor.

In short, this project ratifies the commitment of Asturian Lechera Central with Asturias with small producers. As well as being one more step in our growing commitment to cheese. All the five references are top quality products made with selected milk. They have been produced in the best Asturian herds.
