There are two organizing associations of barista championships
En Spain we have two associations that organize barista championships at the national level. Coffee Cultural Forum and SCAE (Specialty Coffee Asociation Spain). The Forum modality

It consists of elaborating four espresso, two cappuccinos and two specialty coffee-based drinks, either alcoholic or non-alcoholic. The SCA Barista mode

Cup Taster Championship

Brewers Championships
Another of the barista championships is that of BREWERS (filtered coffee). Here the competitors have to make coffee drinks with alternative methods to espresso.
Latte Art Championship
At Latte Art Championship, the barista demonstrates his skills with the jug of milk. Make amazing drawings within a limited time. Every day one is more surprised with the impossible creations that they can make.
And finally, there is the COFFEE IN GOOD SPIRIT (combined with alcohol). Baristas have to craft cocktails with available drinks and two Irish Coffee. It is also a spectacle to see barista work live combining Cocktail with coffee.
