This result is achieved by roasting the dry malt grains at high temperatures -between 200ºC and 220ºC-. The candy they are roasted without drying. The process consists of heating the grains to temperatures between 60 and 75ºC, which causes sugars to form in the center of the grain; and then it is roasted at about 150ºC, achieving a caramelization that gives the beer notes of honey, raisins and caramel. And finally the Pilsen. These malts are characteristic of the stock and they are roasted at a lower temperature and less time than the other two. In addition, they are responsible for providing the cereal taste to the drink.
