Milk Stout, the circular beer from Estrella Galicia

The Estrella Galicia brewery ups the ante with one of the most innovative recipes in its entire catalogue. The new Milk Stout, its twentieth launch, is made with ingredients obtained from milk from cows raised on 100% Galician farms.

Farms like Pena Guisande, whose cows have fed on bagasse from Estrella Galicia. This new special edition will be launched from today with around 20.000 liters for sale.

Bagasse is the main by-product derived from the brewing process, consisting of the insoluble part of the brewer's wort, mainly barley. Thus, a perfect circle is formed that exemplifies the company's commitment to positive impact. The bagasse is the food of the cows that helps the production of milk. One of the by-products of the elaboration of the milk with which the cheese is produced is the whey that in turn is used in the manufacture of this new beer.

Milk Stout, a beer made from milk

It is a Milk Stout style beer whose main feature is the presence of lactose., an ingredient that was incorporated into some beers at the beginning of the XNUMXth century to provide them with new nutritional and energetic values.

In the case of the new Milk Stout, lactose is added in the kettle to provide a silky texture and a creamy beige foam. Roasted malts are also present in this recipe, which give it a dark brown color with ruby reflections. The Huell Melon hops, meanwhile, give it fruity and resinous nuances. The result is a light-bodied beer with a smooth texture, with a slightly sweet entrance, which gives way to a roasted flavor and a dry finish.

“With this elaboration, we have achieved a product with a very special meaning, both for the value of the local products that we use for its elaboration and for the final result. Its creamy texture and sweet touches will surprise beer lovers. Also to those who are not so much, who will find a beer that can be adapted to all tastes, ”says Luis Alvar, brewmaster of Estrella Galicia.
