Best Spanish ham 2020 with surprise

The winners have already been published best ham in Spain 2020 of the Food Awards what delivers the Ministry of Agriculture, Fisheries and Food (MAPA). For the second time, this recognition has had a category dedicated to one of the most representative products of our country. Specifically, the award has two modalities: one for ham Iberian and another for him Serrano or other recognized quality figures. This year, in the second modality, a small Murcian company located in the town of bullas, which has been awarded. Discover the finalists and winners here!

Best acorn-fed Iberian ham

In this modality, the award has gone to the acorn-fed 100% Iberian ham "Juan Manuel Hernández, vintage 2016". It is a product of the Protected Designation of Origin (PDO) Guijuelo, presented by the company Juan Manuel Hernández SA, from Guijuelo (Salamanca).

The finalists were the 50% Iberian acorn-fed ham "Blázquez", presented by Jamones Ibérico Blázquez SL, also from Salamanca; and 100% Iberian acorn-fed ham «Monte Nevado», presented by Jamones Segovia SA-Monte Nevado, from Carbonero el Mayor (Segovia).

We must remember that the law allows presenting as Iberian any crossing have a 50% or more Iberian breed. This is the case of one of the finalists.

Best Serrano ham in Spain 2020

The award in this category in the ham «Serrano Reserve Escámez«, From the Guaranteed Traditional Specialty (TSG) Serrano Ham. East best serrano ham in Spain 2020 has been presented by Brothers Scame Sánchez SL, from Bullas (Murcia).

The finalists were «Gran Reserva 7 Hermanos» ham from the ETG Jamón Serrano, presented by Cárnicas 7 Hermanos, SA, from Valmojada (Toledo). Also as a finalist was the ham «Jamones Casa Vieja», from the PDO Teruel Ham, presented by Jamones Casa Vieja SL, from Calamocha (Teruel).

Add that the ETG seal with which the winner has participated refers to the Traditional Specialties Guaranteed. With this more recent name, it is possible to register the names that describe a specific product or food that is the result of a method of production, transformation or composition. Provided that these correspond to a traditional practice and that it is produced with raw materials traditionally used. They are understood when they have been called for over 30 years.

Participants and jury

In this edition they have participated 49 processors, with 27 pieces of ham, from the first category and 22, from the second. For the selection procedure, as well as in the sensory evaluation sessions, the MAPA has had the collaboration of the Public Institute for Agrifood Research and Technology of the Generalitat of Catalonia (IRTA). Also from the Service of Analysis and Innovation in Foods of Animal Origin, of the University of Extremadura (SIPA).

The sensory evaluation consisted of two phases: a visual to evaluate the external appearance and the cut. The other smell-taste that allows to recognize the aroma, flavor, texture and other sensations in the mouth, persistence and residual taste, and the overall impression. Once the tastings were finished, the remaining product was donated to charities, with the prior consent of the participants.
