We interviewed the Garcés brothers. These rule the first self-sufficient restaurant in Aragon. We talked with them about sustainability and the production model with which they manage their establishment. Also about the problems of depopulation and the success that his project is having. David and Toné Garcés have been the protagonists of the documentary Rural Rebellion: the light reaches the town, where the change in the food model is addressed.
