The 'Cava Academy' opens in London

DO Cava launched on July 9, in London, its new project 'The Cava Academy' aimed at sommeliers.
It is a very ambitious project that aims to position Premium Cava among the best restaurants in the world. Cava academy wants to reach sommelier teams through advanced and specific training.

It is planned to promote this «Cava Academy» project in the main Premium Cava markets in the coming years.

In order to offer the highest academic level, we have had a list of highly prestigious professors such as:

Each edition of “Cava Academy” will have six training blocks: history and regulations of the DO Cava; viticulture and varieties; oenology, cava aging and Cava de Paraje Calificado; figures and cava promotion and, finally, pairings and perfect service.

In short, various topics will be covered in depth, from origin to service. All with the aim of training professionals who are truly experts in cava and providing them with both technical and practical resources. In this way they help them improve their cava offer in the restaurants where they work.

Cava Academy, a training that adds value

In addition, at the end of each block there will be a master tasting to reinforce the syllabus taught. Once the training blocks have been completed, students must take both a written and a blind tasting exam. Those sommeliers who pass both tests will be “Academists and official members of the Cava Academy”. Likewise, the three students with the best grades will receive an incentive consisting of a trip to get to know the main region of the DO Cava for several days.

In this first edition, the training will take place on three consecutive Mondays (July 9, 16 and 23) at the prestigious 67 Pall Mall. This is considered the best wine bar in London, and 45 students have participated . All of them sommeliers of the most prestigious restaurants in the city.

The places, limited, sold out in 48 hours leaving 40 more sommeliers on the waiting list who will have to wait for the next edition.

The Cava Academy project is a firm commitment to specific training on Premium Cava for the main prescribers worldwide. Following the line with the intense work that has been carried out from the DO Cava in the last four years, under the mandate of Pedro Bonet.
