The project ecollevat has been presented by the Catalan Institute of Vinya (Incavi) as a research center and the Innovi cluster. This will be the coordinator of the wineries Juvé & Camps, Gramona, Freixenet, Segura Viudas and Torelló to produce organic yeasts. This study, which will be released next September to the wineries, will help them to apply the new yeasts in your wines, cavas and sparkling wines. This great advance will reinforce quality products, giving special nuances and working for a differentiation in the market.

Own organic yeasts, a growing trend

The yeast are used to start the wine and sparkling fermentations, being the great part of wineries those that use commercial yeasts. However, there is a growing interest in isolating yeast strains from our own vineyards to achieve a greater differentiation of the product. In addition, there are very few on the market that are organic yeasts and obtained in the production area. To all this is added that the regulations for the production of organic wines recommend the use of this element for fermentation.

With this project the member wineries they will be able to differentiate and personalize wines and sparkling wines high end using these indigenous yeasts. In this way they will not have the need to use the standards and commercial ones. They will be able to use organic yeasts with a known behavior for the production of organic and biodynamic wines and cavas. Thus, they also manage to increase the control about fermentation.

Incavi, helping sector research

Moreover, the Incavi has been offering the service for years selection of yeasts from the winery itself and many companies already use it. Many of these families produce this type of 'eco' wine drink. These investigations allow the institute to offer à la carte services to wineries who seek differentiation in their products through the yeasts from their vineyards.
