Soria is the capital of the mycology Spanish. For this reason, it will host a new contest on December 4 and 5: the I International Contest 'Cooking with truffle'. What better place to cook this iconic product than Soria? Place with the largest truffle farm in the world, it accounts for about 30% of Spanish production.

This city, which celebrates a biennial international congress of mycology, takes a new step in the diffusion of the truffle worldwide. He does it with this cooking contest to which 97 applicants from all over the world have submitted. It will bring together participants from 24 countries between contestants and members of the jury.

He said it in the presentation of the contest in Madrid the president of the Academy of Gastronomy of Spain, Rafael Ansón. This will preside over the jury of which the director of the National Tartufo Center en Alba, Mauro Carbone. Last year Soria Black Truffle was twinned with the White truffle by Alba (Italy).

In this way the contest is organized by the Ministry of culture and tourism, with the collaboration of the city council and the provincial council of Soria. The teams will be made up of a chef and a kitchen restaurant.

In the first phase of the contest, the 15 selected teams must prepare a hot dish in a maximum time of 90 minutes. In the final, on day 5, the five highest ranked teams will have 120 minutes to prepare. Of a hot plate or with a cold dish. In this way the winning team will receive the title of World Champion of Truffle Cuisine and an economic prize of 8.000 euros.
