World Cheese Championship 2022: the best

Organized since 1957, the World Cheese Championship has been held in Wisconsin this year. With a participation of 2919 cheeses from 141 different classes and from 28 countries and 33 states, the Rockweed cheese has been crowned with gold. Read on to find out!

The cheese rockweed has been the winner in the category soft, ripened, flavored of the World Cheese Championship organized by the Wisconsin Cheesemakers Association. With a firm rind enveloping a creamy center, Rockweed has easily emerged as the winner of the contest, being called the best in class.

The contest, organized every two years, allows in its competition different types of dry dairy products, such as cheese, butters y yogurts. The winners are chosen under a series of criteria and categories. An expert jury analyzes the different candidates and gives them a score in each of their sections. The cheese with the highest score is the winner of that delivery.

Its creator, Allison Lakin, began making cheese in 2002 as a side job while working in museums. Allison founded Lakin's Gorges Cheese in 2011 and went into business with another cheesemaker, buying milk from a single farmer. Later in 2017 she moved to a farm in Waldoboro, where she began to get more serious about making cheese until she went gold in 2022.

Rockweed is a cheese from strong bark, filled with a soft ribbon seaweed. These algae impart a mild salty taste that combines perfectly with the creaminess of the cheese body. In addition, its external appearance has also been highly awarded, as the 225-gram square wheel shape is truly attractive to the eye.
